At Galaxy, we make and serve our own version of New York style pizza. Our pizza revolves around our dough process and careful selection of high quality ingredients.

Dough

The outcome of our dough process is a crust which is similar in texture to Sourdough - crisp, tough, chewy, and with a slight tang.

Our dough consists of water, olive oil, yeast, and salt. Once mixed, we follow a strict process of cooling and then managing the temperature of our doughballs. We allow for a 72 hour cold fermentation process.

Sauce

Our sauce is also a beneficiary of cold temperatures. To make our sauce, we combine San Marzano tomatoes, basil, garlic, olive oil, and salt - and then simply refrigerate. Once 36 hours have elapsed, it is ready to use.

The flavour of the tomatoes has been enriched by the characteristics of the few ingredients we added. The sauce then cooks through in the oven along with cheese and, if present, toppings. The result is a rich, bright, and fresh tomato sauce that allows the flavour of the core ingredient - the San Marzano tomatoes - to shine through.

Toppings

We top our pizzas with a combination of aged and fresh shredded mozzarella cheeses. The melting and browning characteristics of the pair are unique, and result in a salty, creamy, charred cheese surface that is mottled through with sauce. We also use creamy burrata and ricotta cheeses to complement certain pizzas. 

The toppings we have chosen are simple and high quality. Some of our favourites are Italian sundried tomatoes, homemade pickled onions, garlic crisp chilli oil, Goan chorize, and crumbled chicken sausage.
